A World-Class Guide
Your host for the evening is Jordan Kayall, a seasoned wine guide and professional consumer of the craft. Having led private wine journeys through the historic estates of the United Kingdom, the sun-drenched valleys of Portugal, and the iconic vineyards of the United States, Jordan now brings a world of insight to the Philippines.
Throughout the night, Jordan will lead an interactive educational presentation titled "The Magic of the Pour." You’ll learn the "why" behind every sip, discovering how to navigate a wine list and pair bottles with confidence—all in a relaxed, approachable atmosphere.
A Symphony of Flavors
Our Progressive Tasting Menu features four meticulously curated courses. While served as elegant "tasting portions" via professional table service, the progression is designed to harmonise into a full, satisfying meal:
The Heritage Match: Savoury Chicken Adobo paired with a crisp, vibrant white wine to cut through the rich soy-vinegar base.
The Coastal Connection: Fresh, zesty Grilled Tuna—a GenSan staple—complemented by a chilled, elegant Rosé.
The Hearty Classic: Robust Beef Caldereta served alongside a bold, velvety red wine that stands up to the richness of the sauce.
The Sweet Finale: A silky Leche Flan finished with the light, floral bubbles of a sweet Moscato.
(Each dish will be served with plain rice.)
